Keto Cilantro Lime Grilled Shrimp

Ingredients
- 1 pound (~20) raw jumbo shrimp
- 2 tablespoons olive oil
- 1 tablespoon red onion, diced
- 1 clove garlic, minced
- 1/4 teaspoon cumin
- 1/4 teaspoon chili powder
- 1/4 teaspoon salt
- 3 tablespoons fresh cilantro, chopped
- 1 medium lime
- 4 wooden skewers
Instructions
- Preheat grill to medium high.
Marinate Shrimp
- Juice lime, reserving the remaining fruit for later. Combine lime juice with olive oil, onion, garlic, cilantro, spices, and salt. Optionally, pulse in a blender or food processor to better combine the ingredients.
- Place shrimp in a bowl (or ziploc bag). Add cilantro lime marinade and toss to coat. Cover and refrigerate for at least 30 minutes (and up to 2 hours) to allow shrimp to marinate.
Prepare Skewers
- Cut reserved lime into quarters, and add a wedge to each of the four skewers. Divide shrimp evenly between skewers, reserving ~1/4 cup of the marinade.
Grill Shrimp
- Lightly oil grill grates if needed. Add shrimp to grill and baste lightly with reserved marinade. Cook for 5-6 minutes, or until shrimp are pink and cooked through, flipping skewers halfway through.
