Easy Keto Taco Stuffed Avocados

Skip the guac and enjoy your favorite taco fillings right out of the avocado! Per serving: 325 kcal, 27g fat, 15g protein, 9g total carbs = 6g fiber= 3g net carbs

Ingredients

  • 1 large ripe avocado (~175g) halved and pitted
  • 3 ounces taco-seasoned ground beef cooked
  • 1.5 ounces shredded cheddar or other cheese
  • 2 tablespoons low carb salsa
  • 2-3 teaspoons lime juice optional (see notes)

Instructions

  • In a small bowl, combine beef, salsa, and about half of the shredded cheese.
  • If needed, scoop out a little avocado from each half to make room for the filling. Add this extra avocado to your taco filling mixture along with 1 teaspoon of the lime juice and stir to combine.
  • Sprinkle the prepared avocado halves with lime juice. Divided filling evenly between the two avocado halves. Top with remaining shredded cheese.
  • Air Fryer Method: Place taco stuffed avocados in air fryer, and cook at 370F for 4-6 minutes or until cheese is melted and filling is heated through.
  • Broiler Method: Place taco stuffed avocados on a baking sheet lined with foil or parchment paper. Place under broiler for 3-5 minutes, or until cheese is melted and filling is heated through.
  • Oven Method: Place taco stuffed avocados on a baking sheet lined with foil or parchment paper. Bake at 425F for 6-8 minutes, or until cheese is melted and filling is heated through.
  • Serve immediately. If desired, add additional toppings like sour cream, pico de gallo, and/or fresh cilantro.

Notes

  • The lime juice both adds flavor and prevents browning. Browning shouldn't be an issue if you plan to eat these keto taco stuffed avocados immediately, but I still recommend using it.
  • Most decent salsa should be low enough in carbs to work here, just make sure to check for added sugars and fillers.
  • This is a great use for those taco Tuesday leftovers! With that in mind, it should work fine with other meats (chicken, barbacoa, etc.) as well.
