Low Carb Chocolate Chip Cookies

This keto-friendly cookie recipe is easy to make and packs a lot of chocolatey goodness into less than 2 net carbs.

Ingredients

  • 1/2 cup (125g) natural peanut butter
  • 1/2 cup (125g) almond butter
  • 1 ounce (28g) cream cheese, softened
  • 1/2 teaspoon vanilla extract
  • 1/4 cup Swerve or other sweetener (more for sweeter cookies)
  • 1 teaspoon sugar free vanilla or caramel flavored syrup (optional)
  • 1 tablespoon coconut flour
  • 1 teaspoon baking powder
  • 1 large egg
  • 1/2 cup low carb chocolate chips or pieces
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat oven to 325F.
  2. Combine coconut flour, sweetener, and baking powder in a small bowl and set aside.
  3. In another bowl, mix together peanut butter, almond butter, cream cheese and vanilla extract/syrup until well combined.
  4. Add egg and dry ingredients and stir until a dough forms.
  5. Mix in chocolate and nuts (optional).
  6. Spoon balls of cookie dough onto a nonstick baking sheet or silicone mat. Flatten with a spoon or spatula before baking.
  7. Bake at 325F for 10-12 minutes or until golden brown.
