Maple Keto Breakfast Sandwich

This maple-flavored low carb breakfast sandwich is a good way to keep breakfast interesting (and portable!)

Ingredients

Bun

  • 1 tablespoon natural peanut butter, softened
  • 2 tablespoons unsweetened pureed pumpkin
  • 2 tablespoons almond flour
  • 2 teaspoons coconut flour (or additional almond flour)
  • 1 teaspoon baking powder
  • 2 teaspoons sweetener of choice
  • 2 tablespoons half and half (or heavy cream)
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon maple extract
  • 2 teaspoons sugar free maple syrup (optional)

Filling

  • 2 eggs
  • 2 ounces breakfast sausage
  • 2 slices of cheese

Instructions

Sausage

  1. Divide breakfast sausage into two portions. Press into patties, and pan fry until cooked through.

Buns

  1. While sausage is cooking, combine all bun ingredients in a bowl and stir until well combined.
  2. Divide batter into two lightly greased ramekins. Cook seperately in the microwave for 60-90 seconds, or until cooked through and no longer wet to the touch.
  3. Cut each finished bun in half and toast until golden brown.

Egg

  1. Using an egg ring, scramble or fry an egg for each sandwich

Serving

  1. Assemble sandwiches with one egg, slice of cheese, and sausage patty each. Serve plain, or with sugar free jam or maple syrup.
