Keto Orange Chicken Bowls

These keto orange chicken bowls feature cauliflower rice, sesame broccoli, and chicken tossed in a flavorful sauce!

Ingredients

  • 1 tbsp sesame seeds
  • 2 green onions chopped

Chicken

  • 1 lb ground chicken
  • 1 tbsp sesame oil
  • 2 cloves garlic minced
  • 2 tsp fresh ginger minced

Orange Sauce

  • 1/4 cup fresh squeezed orange juice
  • 1 tbsp orange zest
  • 2 tbsp soy sauce or liquid aminos
  • 1 tbsp chili sauce ex. sriracha or Huy Fong
  • 1 tbsp unsweetened rice vinegar
  • 2 tbsp granulated Lakanto Classic or other keto sweetener
  • 1/4 tsp xanthan gum optional

Cauliflower Rice

  • 1 lb riced cauliflower
  • 1 tbsp sesame oil
  • 2 cloves garlic minced
  • 2 tbsp soy sauce or liquid aminos
  • 2 tbsp chicken broth or water
  • 2 tsp unsweetened rice vinegar or lime juice

Sesame Broccoli

  • 1 lb broccoli florets
  • 2 tbsp sesame oil
  • 2 cloves garlic minced
  • 2 tsp fresh ginger minced
  • 1/2 tsp crushed red pepper flakes optional
  • 1/4 cup chicken broth or water
  • 1 tbsp soy sauce or liquid aminos

Instructions

Toast Sesame Seeds

  • Toast sesame seeds in a dry skillet over medium heat, stirring frequently, until golden and fragrant (2-3 minutes). Set aside.

Prep Sauce

  • Combine sweetener and xanthan gum (if using).
  • Add remaining sauce ingredients to a small saucepan over medium heat and bring to a simmer.
  • Stir in sweetener mixture and simmer until dissolved, 1-2 minutes. Adjust sweet/heat levels to taste. Remove from heat and set aside.

Cauliflower Rice

  • Heat oil in a large skillet over medium heat. Add garlic, and sauté until fragrant (about 30 seconds). Add riced cauliflower and toss to combine.
  • Add chicken broth and soy sauce. Continue to cook, stirring regularly, for about 5 minutes or until tender.
  • Stir in rice vinegar and remove from heat. Season to taste.

Sesame Broccoli

  • Heat oil in a large skillet over medium heat. Add garlic, ginger, and red pepper, and cook until fragrant, about 1 minute.
  • Add broccoli and toss to combine. Sauté for about 4 minutes, until bright green.
  • Add chicken broth and soy sauce. Cover pan and allow to steam for 3-5 minutes, or until broccoli is fork tender. Top with about half of the toasted sesame seeds.

Keto Orange Chicken

  • Heat oil in a skillet over medium heat. Add garlic and ginger, and sauté until fragrant, about 30 seconds. Add chicken and toss to combine. Cook for about 3 minutes, until chicken is mostly browned.
  • Reduce heat to medium low. Add the orange sauce and toss to coat. Cook for 3-5 minutes, until sauce has thickened and chicken is cooked through.

Keto Orange Chicken Bowls

  • Divide cauliflower rice into four portions, top with chicken and broccoli, then garnish with green onion and remaining sesame seeds!
  • Alternatively, you can toss the chicken, broccoli, and cauliflower rice together before serving and adding garnish.

Notes

  • Storage: You can store the parts of this dish separately, or prep the bowls before storage. Either way, refrigerate in a sealed container for up to 4 days.
  • You can replace the ground chicken in this recipe with diced chicken or another protein of your choice, adjusting cooking time as needed.
  • Please use fresh orange juice and zest! You'll avoid the added sugar from the bottled stuff, and get way more flavor per carb.
