Peanut Butter Protein Sandwich Cookies

Like a lot of low carb protein bars, ZenBars taste best when slightly warmed (and even better when baked into high protein cookies!)

Ingredients

  • 1 peanut butter chocolate chip ZenBar
  • 4 tsp natural peanut butter

Instructions

  • Preheat oven to 350F.
  • Unwrap bar and microwave for 10-15 seconds to soften slightly.
  • Divide bar into 4 equal sections, and shape into flat rounds. Bake for about 5 minutes or until golden brown. Allow cookies to cool.
  • Spread about 2 teaspoons of peanut butter between each pair of cookies to form sandwiches.
