Keto Cilantro Lime Grilled Shrimp

Warmer weather means that it’s time to fire up the grill, which is great since grilling happens to be one of my favorite ways to cook shrimp. Unlike ribs and some other cuts of meat, which can take hours of indirect heat for tender and flavorful results, this keto grilled shrimp recipe only needs a few minutes on the grill.

The cilantro lime marinade ensures that the shrimp stays nice and juicy, while also adding some bright, fresh summer flavors. They don’t have a ton of fat content, but these keto shrimp skewers can be a good way to squeeze in some extra protein as well as the selenium, astaxanthin, B vitamins, and other nutrients found in shrimp.

Keto Cilantro Lime Grilled Shrimp

This keto grilled shrimp recipe is easy to make but packs a lot of fresh flavor. Per serving: ~135kcal, 8g fat, 15g protein, 1g carbs

Ingredients

  • 1 pound (~20) raw jumbo shrimp
  • 2 tablespoons olive oil
  • 1 tablespoon red onion, diced
  • 1 clove garlic, minced
  • 1/4 teaspoon cumin
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon salt
  • 3 tablespoons fresh cilantro, chopped
  • 1 medium lime
  • 4 wooden skewers

Instructions

  1. Preheat grill to medium high.

Marinate Shrimp

  1. Juice lime, reserving the remaining fruit for later. Combine lime juice with olive oil, onion, garlic, cilantro, spices, and salt. Optionally, pulse in a blender or food processor to better combine the ingredients.
  2. Place shrimp in a bowl (or ziploc bag). Add cilantro lime marinade and toss to coat. Cover and refrigerate for at least 30 minutes (and up to 2 hours) to allow shrimp to marinate.

Prepare Skewers

  1. Cut reserved lime into quarters, and add a wedge to each of the four skewers. Divide shrimp evenly between skewers, reserving ~1/4 cup of the marinade.

Grill Shrimp

  1. Lightly oil grill grates if needed. Add shrimp to grill and baste lightly with reserved marinade. Cook for 5-6 minutes, or until shrimp are pink and cooked through, flipping skewers halfway through.

Notes:

  • This keto cilantro lime shrimp recipe works fine with either fresh or frozen shrimp. If using frozen, just allow them to marinate until thawed.
  • Optionally, you can soak your skewers in water before adding the shrimp to prevent charring on the grill.
  • These keto shrimp skewers can also be made on the stove using a grill pan, or in the oven under the broiler. Add 1/2t liquid smoke to the marinade if desired to add some of that smoky flavor.
