Air Fryer Keto Zucchini Fries

Fries actually weren’t too high on my list of foods to find keto replacements for, but I’ll admit to sometimes craving a crispy, salty side dish to pair with a bunless burger or keto corn dog. Some people go for daikon or jicama fries, but those exotic veggies can be pricy and hard to find in many places. Zucchini on the other hand? Super common, low in carbs, and generally affordable. Thus the birth of these delicious air fryer keto zucchini fries!

As you might imagine, the first step to making these is slicing your zucchini into “fries.” One large zucchini or two small to medium should be enough for a few dozen fries. Potatoes crisp up easily thanks to their starch/carb content, but the zucchini will need a bit of help. Similar to some of my other keto versions of “fried” foods like potato wedges, these keto zucchini fries use a parmesan and pork rind based breading.

Just dip the keto zucchini fries in egg, toss in the breading mixture, and then into the air fryer they go! I have an “oven” style air fryer with racks, which makes layering easy. For best results, I recommend using racks with basket style air friers too. Either way, you’ll know these fries are done when they are golden brown and perfectly crisp on the outside. Like most fries, they are best served immediately. Try dipping in low carb spicy ketchup or honey mustard sauce.

Air Fryer Keto Zucchini Fries

Ingredients

  • 1 large zucchini about 12 ounces
  • 1 egg
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper
  • 1/2 cup finely grated parmesan 56g
  • 1/2 cup crushed pork rinds 28g
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp EACH: onion powder, dried parsley, cumin, celery salt
  • 1/4 tsp dried oregano

Instructions

  • Prep air fryer by adding racks (if using) and lightly spraying with oil if needed.
  • Trim ends from zucchini and cut in half crosswise. Slice each half into "planks", and then slice further into fries.
  • Whisk together egg, salt, and pepper.
  • Separately, combine the crushed pork rinds, parmesan, and remaining spices.
  • Working a few fries at a time, add to egg and coat. Transfer to pork rind mixture and toss to coat again. Move coated fries to air fryer (see notes), and repeat for remaining zucchini.
  • Air fry for 10 minutes at 400F. Toss fries and/or rotate racks, and air fry for an additional 5-7 minutes, or until crisp and golden brown.

Notes

  • These zucchini fries turn out the best when the air fryer is not overcrowded. Using racks to separate layers makes this easy, resulting in perfect crispy fries. Working in batches is another option. If you must stack the fries so they are touching, layer them in opposite directions.
  • For another flavor combination, try Cajun flavored pork rind crumbs combined with ½ teaspoon garlic powder and 2 teaspoons Everything but the Bagel seasoning.
